Production of carrots for the fresh market in the United States ranks close to the top among vegetable products with 1.8 billion pounds produced annually on approximately 80.000 acres (1). Slightly over 60% of this production is centered in Texas and California with the remainder divided among 12 other states. Supplies of carrots are available all year with no distinct peak season.
